Wash and peel potatoes for later use.
2. Slice the potatoes into thin filaments and put them in clean water, and wash off the starch until the water becomes clear.
3. Put the dried potato shreds into a large bowl, pour in olive oil and mix well.
4. Put the shredded potatoes into the mixed flour and stick the flour one by one.
5. Cook the prepared shredded potatoes in a boiling water pot for 9 minutes, turn off the heat immediately after steaming, and take them out to cool for later use.
6. Break the eggs for later use.
7. Put the broken eggs in a wok and put them in chunks for later use.
8. Put the oil in the wok, add the steamed potato shreds, and add the right amount of salt to stir fry.
9. Add scrambled eggs.
10. Mix well, turn off the heat and serve on a plate.
