Fuling mustard tuber is a fresh, tender and crisp flavor product made of Fuling's unique green vegetable head through unique processing technology. Together with French pickled cucumber and German sweet and sour cabbage, it is also known as the three famous dishes in the world, and it is also one of the three famous dishes (mustard tuber, Osmunda japonica and bamboo shoots) exported by China. Its traditional production techniques were included in the second batch of national intangible cultural heritage list.

The planting of Qingcaitou in Fuling District involves more than 30 towns, streets160,000 farmers and 600,000 vegetable farmers, forming a regional layout and concentrating into an industrial belt.
