Steps of stewing eggplant with herring
1. Wash herring. The head of a herring can be removed or left. Personal habit, wash eggplant and tear it into strips by hand.
2. Slice the onion. Pat garlic with a knife.
3. put oil in the pot, a little more than cooking, and heat the oil. Then turn off the fire and let the oil dry, because the herring is going to fry. If the oil is very hot, it will overflow and fry the herring in a few seconds.
4. Fry the fish on both sides with low fire for two or three minutes, then add the onion slices. This is my personal habit, because garlic smells strong, and I like to put it before cooking. Then stir-fry the onions twice, and then add the eggplant. Stir-fry the eggplant until it is soft.
5. Add seasoning, soy sauce, thirteen spices, salt and sugar. Put less sugar, because a small amount of sugar can be fresh, not sweet, and you don't have to put it. Put some water, cover and stew for a few minutes.
6. The herring is cooked very well, so it will take a while to stew. Then add garlic and stir-fry a few times, and put a few drops of vinegar in the boiling place of the soup to remove the fishy smell. If you don't want to put it, put some ginger slices in the fish stew. Then turn off the fire, put some vegetarian dishes, turn them over twice and put them on the plate ~ ~
