Prepare ingredients:
2 trotters, lotus root 1 root, sliced onion and ginger, garlic, cooking wine, oyster sauce, soy sauce, salt, rock sugar, pepper, star anise, cinnamon, fragrant leaves, fennel, tsaoko and a bottle of Yanjing beer.
Step one:
Chop pig's trotters into small pieces, peel lotus root, wash and cut into pieces, and slice fresh ginger for later use.
Step two:
Put a proper amount of water into the pot, add trotters, onions, ginger slices and cooking wine, boil, skim off the foam, remove and wash with water.
Step 3:
Pour oil from another pot, add rock sugar when the oil is hot, and simmer slowly. When the crystal sugar melts and turns yellow, add pig's trotters, stir-fry until the color changes, then add fragrant leaves, cinnamon, fennel, star anise, two tsaoko fruits, light soy sauce and a little soy sauce for coloring, remove the fishy smell with a little cooking wine, pour in half a bottle of beer and add appropriate amount of water. Turn it down.
Step 4:
Add chopped lotus root pieces, cover the pot, and stew for another 20 minutes until the trotters are soft and rotten. Sprinkle some chopped green onion (or chopped parsley) when cooking.
Tips:
1, time is very important when frying rock sugar. It's not easy to paint after a short frying time. After a long time, sugar will have caramel flavor, which will affect the taste. Fry it until it turns yellow.
2. pouring beer can make pig's trotters tender. You can also put it when stewing meat, especially when cooking braised pork, you can add some beer in moderation.
