3) Cook tofu and start a new pot. Do not add oil, chop the meat directly and stir-fry slowly until the minced meat turns dark brown and crisp. Add minced ginger and garlic, stir-fry, add 1 tbsp spicy bean paste and stir-fry red oil.
4) Add a little lobster sauce, add broth or water, put the tofu into the pot (broth, the amount of water should not exceed tofu,), add a little wine and 1 tablespoon soy sauce to add color, and cook for 5-6 minutes, taking care not to heat it too hard to avoid the tofu cracking.

② Fish-flavored tofu

3. Heat the right amount of oil in the pot, pour in garlic, pepper and shredded ginger and stir-fry.
4. Scoop in a tablespoon of red bean paste and stir-fry over high heat until the sesame oil flows out.
5. Add the meat foam and stir fry until it changes color. Add water and high-alcohol broth and bring to a boil.
6. Pour in the tofu, don't stir fry with a shovel, and gently turn the tofu from the bottom with a shovel so as not to stick to the pot.

Small note:
1: Tofu itself is soft. Don't stir fry with a shovel when adding the pot to avoid tofu caking.
2. The red bean paste itself is salty and does not need to be salted.
3. After adding water starch, turn to medium heat until the juice is slightly thick. If there is a fire, it is easy to dry the soup and the tofu sticks to the pot.
③ Stuffed tofu
Tofu, peanut oil, soy sauce, pepper, corn starch, chives, pork, salt, oyster sauce, chicken essence and water.
The way of doing things
1. Dig a small piece from the middle of tofu, preferably in a hemispherical shape, and be careful not to dig through the bottom;
2. Chop pork, add peanut oil, salt, chicken powder, corn starch and pepper and mix well;

⑤ Kung Pao Tofu
Ingredients: tofu, peanuts, oil, salt, ginger, soy sauce, cooking wine, balsamic vinegar, sugar, sesame oil, pepper, bean paste and starch.

1) Stir-fry peanuts, cool and peel, mince ginger, and cut green onions.
2) Take a clean small bowl and pour in a tablespoon of soy sauce.
3) Pour in a tablespoon of cooking wine.
