How to make soft and waxy donkey rolls (dry glutinous rice dumplings)?
Microwave soybeans on high heat for 2 minutes, and turn off the machine as soon as there is a fragrance . After cooling, put it into a mixer and beat into dry powder, sieve it and put it into a bowl.
Add boiling water to the flour and stir well, then put it into a bread machine with glutinous rice flour, sugar, oil and purified water and stir for 20 minutes. Turn on the stir-fry function for 40 minutes to allow the glutinous rice balls to cook thoroughly. Take it out and put it in the refrigerator to freeze until it is hand warm.
Divide the glutinous rice balls into 30g small balls, and divide the pre-made bean paste into 20g small balls. Take a glutinous rice ball and put it in the middle of the plastic bag, and roll it into a round shape with a rolling pin.
Put a small bean paste ball into the middle. Don't open the plastic wrap completely, as it will stick to the skin.
While wrapping it up like a bun, slowly tear open the plastic wrap. The ball is out of the way. Your hands are always outside the plastic wrap and your hands are clean during the whole process.
After wrapping, tighten the plastic wrap tightly with your hands. Turn it a few times and don't use too much force as it may break the plastic wrap.
Open the plastic wrap, do some micro plastic surgery, haha, it’s ready.
If you want it to be beautiful, you can put it into a mooncake grinder and press it, and coat it with soybean powder before pressing.
At this moment, we wrap it in soy flour, which is delicious, fragrant and prevents sticking.
My portion size is basically 22. Each one is 50g. If you want to ask why, haha, I took 2 of them just for myself to eat first. It’s so delicious, I’m afraid I won’t be able to stop!
Tips
1. Don’t use too much water, otherwise it will stick to your teeth.
2. Stir-fry the soybeans until fragrant, do not burn them. Keep an eye on your microwave, dear!
3. The hand temperature is only 35 degrees. At this time, the glutinous rice balls are not sticky at all and are suitable for operation.
4. Everyone knows that when rolling dough, it is thick in the middle and thin around the edges, and it is the same here.
5. If you can't finish eating, put it in the refrigerator. It can be stored at 4'C for 5-6 days without any problem. When eating, microwave on medium heat for 1 minute, or on high heat for 30 seconds.
