Methods/steps
Beat 3 eggs and mix well in one direction. I bought Cordyceps eggs, which are yellow and taste better than ordinary eggs, but the price is slightly higher.
Sprinkle a proper amount of flour, continue to stir in one direction, stir into a thin and thick egg batter as shown in the figure, and stir all the small bumps.
Sprinkle with proper amount of black sesame seeds and continue to stir until uniform.
When the pot is cold, pour a little vegetable oil. The first pot needs oiling, and it is not needed after the second pot, because the bottom of the first pot is rather astringent.
Turn on a small fire, scoop a spoonful of the stirred egg batter and spread it out. Then shovel off the excess parts of the edge with a shovel.
Turn over, fry until golden brown on both sides, and take out the pan.
Roll up the fried egg sesame cake with chopsticks while it is hot, as shown below.
