The practice of lean broth
The practice of lean broth is as follows:

Ingredients: lean meat, sparerib soup, coriander.

Ingredients: ginger, soy sauce, salt, chicken essence, cooking wine, white pepper, sweet potato powder.

Step 1: Clean lean meat, slice, chop coriander and slice ginger.

Step 2: Add 1 tablespoon soy sauce and 1 tablespoon cooking wine to the lean meat, marinate for half an hour, and add 2 tablespoons sweet potato powder before cooking.

Step 3: Pour the sparerib soup into the pot, add 2 slices of ginger and boil. There is no clear water in the sparerib soup, but a proper amount of cooking oil should be added.

Step 4: Turn off the fire after boiling, let the soup stand still, and put the meat slices into the pot one by one. If it is boiled, the sweet potato powder wrapped in meat slices will make the soup turbid.

Step 5: put them all in and fire. Give it a gentle push with a spatula to prevent it from sticking to the bottom of the pot. Pour in a spoonful of soy sauce to taste, and the fire will boil again.

Step 6: Mix a bowl of water starch with a spoonful of sweet potato powder. After the water is boiled, slowly pour in water starch, while stirring, to see your personal taste.

Step 7: Add 1 tbsp salt, 1 tbsp chicken essence to taste, sprinkle with appropriate amount of white pepper, and sprinkle with coriander to serve.
