1, braised pork
Wash the pork belly and cut it into cubes. Put a spoonful of oil in the pot, which is slightly hot. Add rock sugar and stir-fry until the rock sugar is completely melted. Stir-fry diced meat until evenly coated with syrup. Add appropriate amount of boiling water, add soy sauce, and simmer the seasoning bag. Cover the pot and simmer for about 40 minutes until the juice is dry.
2. cold rice noodles and tofu skin
Shred bean curd skin, onion, garlic and coriander. Boil the water in the pot, add a little edible alkali, then pour in the bean curd skin, boil it over high fire and take it out after half a minute. Rinse the tofu skin with purified water and drain it. Add shredded onion, coriander and minced garlic into tofu skin. Add soy sauce, salt, a little sugar and sesame oil to taste. Deep-fry dried Chili peppers in hot oil, pour them in, and finally mix well.
3. Fried beef with celery
Slice the beef and wash it with clear water several times. Then add salt, a little baking soda and a little soy sauce. Add water and starch, and mix well. Cut the celery and prepare some shredded ginger and minced garlic. Blanch celery in boiling water for half a minute, and then take it out for later use.
Put cold oil in a hot pot, pour in beef, stir-fry quickly over high fire until the beef changes color. Add shredded ginger and minced garlic and stir-fry until fragrant. If you like spicy food, you can add some dried peppers and fry them together. Finally, pour in celery, add oyster sauce and soy sauce to taste, stir-fry evenly over high fire, and turn off the heat to serve.
4. Four happy parties
Chop the pork into minced meat, not finely, but slightly coarser. Cut onion and ginger into powder. Put the meat stuffing into a large container, pour in the right amount of water and stir well. Don't put too much, or the meatballs won't take shape. Add egg white, onion and ginger, stir well, pour in soy sauce, salt and cooking wine, and finally pour in a little water starch, stirring in one direction all the time.
When the oil in the pot is 60% hot, pour in the meatballs and fry them in various shapes over medium heat. Take it out, put it in a plate and steam it in a steamer for 30 minutes. Pour a little oil into the pot, pour the juice of steamed meatballs into the pot to boil, pour a little water starch to thicken and pour it on the meatballs.
Step 5 steam cabbage rolls
Grinding pork into minced meat, adding salt, soy sauce, soy sauce, chopped green onion, Jiang Mo and pepper, and stirring evenly in one direction. Add a little more starch and mix well again. Boil cabbage leaves until they are soft. Spread the meat on the leaves of Chinese cabbage and roll it up. Make all the Chinese cabbage meat rolls and put them on the plate.
