What are the representative dishes of Ji cuisine?
There are three main schools of "Ji cuisine", namely Zhili official cuisine represented by Baoding, Gongting cuisine represented by Chengde and Jidong cuisine represented by Tangshan. On the top of the "Pyramid" are court dishes outside the Great Wall, which are different from the imperial cuisine in Beijing. Featuring delicacies and game, it has a crisp taste and unique and exquisite techniques. Down the "pyramid" is Zhili official cuisine, which is geared to the middle-end consumer groups, with rich sauce flavor and luxurious utensils. Further down are Jidong cuisine and Baoding's home cooking. There are many snacks, such as chestnut noodles, chess pieces and donkey meat, which are aimed at the widest public.
