"Nine bowls and three rows" is an authentic banquet for Hui people in Xinjiang. Going to this banquet is called "eating seats". At weddings, funerals and weddings, most Hui people have to make "nine bowls and three rows" banquets to entertain guests, relatives and friends.

"Nine bowls and three rows" means that all the dishes at the banquet are nine bowls of the same size, and the nine bowls should be arranged in three rows, and each row of three bowls should form a square, so it is three rows from north and south or east and west, hence the name "nine bowls and three rows". This kind of banquet is not only elegant, but also has established rules when serving. Generally, the four-corner meat dish is served first, which is called "corner meat", and then the four-corner meat dish is served. Among them, the names of the two opposite bowls should be symmetrical, which is called "Menzi" dishes. "Menzi" dishes have the same name, but the patterns and raw materials can be different. For example, if there are meatballs in the east, then the dishes in the west must be meatballs, but beef can be used on one side of meatballs and mutton can be used on the other side of meatballs. In addition, eggs and fungus can be separated to show the difference. The purpose of this requirement is not only to have symmetrical beauty, but also to increase the color and variety of dishes. Finally, the bowl in the middle is usually cold, and the hot pot is placed in the middle of the table for families with conditions.
