Ingredients: 250g wheat flour; Accessories: proper amount of oil and salt.
Steps:
1. Add a proper amount of salt to the flour and make a dough.
2. Put the dough aside and wake it for 30 minutes.
3. Proofing the dough, adding appropriate amount of water, and kneading and washing (probably after changing the water twice).
4. Pour the washed noodle water into another basin and control the gluten with a strainer.
5. The washed gluten can be put aside or steamed and mixed with cold noodles.
6. Put the washed noodle water aside for about two hours, and carefully skim off the water on it.
7. Take a container with a flat bottom, coat it with proper amount of oil, pour a spoonful of noodle water into the plate, boil water in the pot and steam for 2 minutes.
8. Take out the steamed cold rice noodles, put them in a basin filled with cold water, let them cool, brush some cooking oil on the surface, and then take them out.
9. Make left and right cold rice noodles in turn.
