The one in the picture above is a small preserved egg, and the one below is an ordinary preserved egg! These two dishes are very popular cold dishes. I found a recipe on Douguoshang to share with you:
1. Remove the shells of preserved eggs and wash them.
2. Don’t use a knife to cut the preserved eggs, otherwise they won’t stick to the knife very well. Just use a thin thread to pull them apart.
3. In a bowl, chop a spoonful of pepper, pour some vinegar, add some sugar, and stir.
4. Just pour it on the preserved eggs.
This is the recipe I saw on Douguo. It probably doesn’t use any other ingredients. You can try it~
