Ingredients: pork belly, pepper, pepper, oil, salt, garlic, cooking wine, soy sauce.
Practice: Wash pork belly and cut it into thin slices, wash pepper and pepper and cut them into strips obliquely, and peel and cut garlic into pieces for later use.
Put a little oil in the pot. When the oil is warm, slice the pork belly and stir fry. Stir-fry pork belly in fat oil. After the meat curls slightly and turns golden yellow, add cooking wine and light soy sauce and stir-fry for a while.
Finally, add chopped garlic and green pepper, stir fry for 2 minutes, and season with salt.
2. Fried meat with dried bamboo shoots:
Ingredients: pork belly, dried bamboo shoots, salt, soy sauce and oil.
Practice: soak dried bamboo shoots in cold water for about a day. Slice the meat for later use. Heat oil in a pan, add onion, ginger and garlic, and stir-fry the meat. After the meat is fried to golden brown, add the bamboo shoots and stir fry. In the process of stir-frying, add seasonings such as salt and soy sauce. After frying, add monosodium glutamate and serve.
3. Fried meat with tofu:
Ingredients: pork belly, oily tofu, carrot, garlic, oil, salt, ginger, soy sauce, starch, sugar, sesame oil and broth.
Practice: heat the pot and oil it. When the oil temperature is 30%, put the marinated meat slices into the pot and stir fry. Stir-fry until the fat part is transparent and fragrant. Take it out for later use. Base the oil in the pan, stir-fry garlic slices in the pan, and stir-fry carrot slices in the pan.
Stir-fry the bean curd together for a few times, add salt, soy sauce and soy sauce to taste, pour a small bowl of stock (about half the height of the material) into the pot, spread the stir-fried meat slices on the bean curd, weigh the materials in the pot, and cover it for stewing.
Stew the oily tofu until it tastes full (about 2-3 minutes), open the lid and turn to high fire to collect the juice. Before taking out the pot, put the green garlic leaves in the pot and fry them twice before taking out the pot. (Spicy people can also pour a spoonful of red spicy oil.)
4. Fried pork with sour beans:
Ingredients: minced meat, sour beans, ginger, dried peppers, cooking wine, soy sauce, soy sauce, sesame oil, oil, pepper and sugar.
Practice: Soak sour beans in clear water for 20 minutes, wash them, dry them by hand and cut them into small grains. Put the meat stuffing into a bowl, pour in cooking wine, soy sauce, vegetable oil and white pepper and marinate for 5 minutes. Peel and chop ginger, and cut dried pepper into small pieces. Pour the oil into the pot, heat the oil to 70% heat, add the meat stuffing, stir fry quickly until the meat stuffing is discolored and cooked, and take it out.
Continue to pour some oil into the pot and heat it on high fire. When the oil is 40% hot, add Jiang Mo and chili, stir-fry until fragrant, then add sour beans and stir-fry for at least 3 minutes.
Add fried minced meat, then add light soy sauce and sugar, stir well, continue stirring for 2 minutes, and pour in sesame oil.
