The origin of vinegar: a short story about the origin of vinegar in China history.
Origin of vinegar: According to legend, before Emperor Wen of Han Dynasty, vinegar was called acyl, which was formed in Shang Dynasty and was changed from sorghum liquor.

According to legend, in Shang Dynasty, Yin built a "Star Tower" in Beijing to entertain Princess da ji, so as to win the loyalty of the Prime Minister. But people who eat need medicine-a kind of mountain spring water and sorghum wine pulp. Zhou Wang ordered people all over the world to make sacrifices, and officials in Jinyang presented kaoliang spirit produced in Luliang Mountain in the lower reaches of Fenhe River, which is located 40 miles southwest of Jinyang. These winemakers and porters worked hard day and night to go to Chao Ge. Unexpectedly, the weather was hot and the journey was long. Most of the porters fell ill from heatstroke, and the wine picked out overflowed with a peculiar smell. These winemakers know that the kaoliang spirit has gone bad, and if they send it to Chao Ge, they will die. If they don't send it, they can't go back to work. They might as well drink bad wine and die.

So I opened the jar and opened the mud seal. Unexpectedly, I smelled an attractive smell of alcohol and tasted it, which was sour and sweet. The craftsman was overjoyed and fled home, so he made some more in this way and invited his neighbors to taste it. Everyone is full of praise. After eating for a period of time, I found that this "wine" has the effect of treating diarrhea and colds, and it can also stimulate appetite. When Jinyang officials heard about it, they asked for an altar for Zhou Wang. Zhou Wang thought it was wine, but it was so sour that he was booed after drinking it.

When Princess da ji asked the name of this thing, the official had a brainwave and named it "Xi". The clerk, therefore, came from Shaanxi and used utensils to flow into Chao Ge, so he recorded it as "acyl". Since then, "acyl" has gradually become an indispensable condiment for Shanxi people, and people who go out to Shanxi are also called "old acyl" because they eat "acyl" every time.

In the Han Dynasty, Chen Ping and Zhou Bo killed Lv Hou, and made Liu Heng, who was born in Chang 'an and grew up in Jinyang, the Emperor of the Han Dynasty, and "acyl" became the designated tribute of the Han Palace. In the twelfth year of Emperor Xiaowen, Jinyang sent people to pay tribute and went to the harem as usual to visit Emperor Xiaowen's mother, Empress Bo. Empress Bo is a human being and naturally likes things in her hometown. But as soon as she heard that all the eunuchs in the palace were called "old acyl", she felt very uncomfortable and wanted to change the name of "acyl". After Emperor Xiaowen knew what his mother meant, he asked the courtiers to think of a good name instead of "acyl".

A minister thought for a moment and said, "This year is the year of Gui You, and today is the 21st day of the twelfth lunar month. It is exactly twenty-one to separate the word "vinegar" from the word "past". Emperor Xiaowen was very happy, so he wrote the word "vinegar" in calligraphy and pasted it on the vessel containing "acyl". Since then, "acyl" has been called "vinegar".
