working methods
1. Scales, gills, husks, washing and draining of yellow croaker. Peel garlic, cut onion into small pieces and slice ginger;
2. Pour a proper amount of oil into the pan, smear a little dry starch on both sides of the fish, and fry in the oil pan until both sides are golden;
3. Pour a little oil into the pot, add onion, ginger, garlic, star anise, dried pepper and stir-fry until fragrant, add yellow croaker, cook soy sauce and yellow wine until fragrant, and then add vinegar and water. The amount of water does not need to be equal to that of Dachuan fish, otherwise it is not easy to dry up if there is too much water. Then add salt and sugar to boil.
4. After boiling, fry the fried yellow croaker for about ten minutes. Turn over in the middle and wait until the juice is almost finished.
