1. Chop the lean meat from the front legs into meatloaf, or you can also use pork belly. Personally, I prefer the lean meat of the front legs to be crispy and not greasy.
2. Remove the internal organs and clothes from the salted squid. Wash well.
3. Chop the salted squid and pork fillings, add a small spoonful of light soy sauce, and beat slightly until fluffy.
4. Place the mixed salted squid patties on the steaming plate to keep them fluffy. The meatloaf steamed this way tastes better. Finally add shredded ginger.
5. Steam over high heat for about 13 minutes. Add a small spoonful of cooking oil and an appropriate amount of chopped green onion.
Cooking Tips
The salted squid sold in the market usually has some added ingredients, so it will not go bad after being stored for several years. It is recommended that you make your own salted squid. Bought fresh squid, clean it with clean water and drain it. Add an appropriate amount of raw salt and marinate for a day, pouring off excess water. Spread a layer of raw salt on a layer of squid and put it in an airtight jar to seal and freeze. It is clean and hygienic, reduces the production of nitrite, and has a certain quality guarantee.
