How to make Japanese matsutake soup

This kind of soup is not recommended for families to make. It is more troublesome and the ingredients are not easy to buy. Japanese matsutake soup is usually seafood soup, and the base soup may be pork rib soup or chicken soup. Chicken soup would taste better.

First you need to make the chicken soup.

Then prepare the seafood soup ingredients. Matsutake mushrooms (I haven’t seen many of them for sale in Beijing), flower crabs, clams, if you are rich you can buy live seafood, squid, and oysters. Generally, restaurants will not do this. Instead, restaurants use products such as fish balls and fish tofu.

In fact, seafood soup is very easy to make. Blanch the flower crabs in water with ginger, onion, garlic and cooking wine. After blanching, cut off the claws and keep them. First spit out the sand from the clams (soak them in salt water for a while), wash them and blanch them again and set aside.

Put the chicken soup into the pot, let it simmer for a while, then add the crab claws, clams, fish tofu and other ingredients. Simmer over low heat for some time. Just add salt and it's ready to drink.

Some restaurants do not use chicken soup, but use chicken essence and MSG. With so many seasonings, of course you will find it delicious.

I have worked in a restaurant, so don’t think about how good the food in the restaurant is.

Making it at home is the healthiest thing! I went to work in a restaurant and learned a lot of good food~~~We will communicate more in the future~~~~Hehe~~~~~
