Wash the long fish and cut it into sections for later use.
Wash the ribs, soak them in water and skim off the foam. Then heat the pan, stir-fry the onion and ginger until fragrant, pour in the ribs, stir fry, pour in the cooking wine, and then pour in the cold water.
