Materials:
A young chicken,
A cup of soy sauce, a cup of cooking oil, a cup of rice wine,
Ginger, onion, sesame oil
Exercise:
1. Wash the tender chicken, cut it into 5cm square pieces, and put all the chicken offal and liver into a sand bowl. At the same time, measure soy sauce, cooking oil and rice wine in a cup with a capacity of about 80g, add a little ginger and onion, and do not add water.
2. Stew with a charcoal stove on low fire, and turn it every ten minutes or so to prevent burning. Don't open the lid too much, stew for about half an hour until the marinade is concentrated. Pick the onion and ginger and add a little sesame oil.
Three cups of chicken is a traditional famous dish in Ningdu, Jiangxi Province, which has a history of hundreds of years. Its uniqueness lies in chopping the slaughtered chicken into small pieces when cooking. As for the sand bowl, there is no need to make soup, just simmer it with a cup of sweet rice wine, a cup of sesame oil and a cup of soy sauce, hence the name "three cups of chicken".
