1 Cut the eggplant into hob pieces.
2. Use salt to marinate the eggplant until water comes out.
3. Peel the potatoes and cut into small hob pieces, mince the onion, ginger and garlic.
4. Wash the cabbage and cut into small pieces and set aside.
5. Heat the oil in a pot until it reaches 70% to 80%, and sauté the onion, ginger and garlic until fragrant.
6. Pour in the potatoes and stir-fry until the surface is golden brown, then set aside.
7. Pour in the eggplant and stir-fry again
8. Pour in the potatoes and continue to stir-fry, add an appropriate amount of water to cover the potatoes and eggplant and simmer for 5 minutes
9 .Pour in the cabbage and stir-fry, cover the pot and simmer over low heat for 10 minutes
10. Stir in the middle, add pepper powder, five-spice powder and salt and mix well
11 .Add vinegar before serving.
