Ingredients: 250g beef, 500g fresh mushrooms.
Exercise:
1. Wash the beef, cut it into thin slices, mix well with soy sauce, salt, wine and sugar, add starch, oil and a little water to marinate for more than 30 minutes, and mix well. After the beef slices absorb water, add a little more and repeat for 2 or 3 times to make the beef more tender and smooth.
2. Take a small pot, add some water, ginger and salt to boil. Take out the mushroom feet, wash and slice them, and put them into a small pot to fly water for later use;
3. Put oil in a hot pot, saute ginger slices, add mushrooms that have already flown, stir-fry thoroughly, and set them aside;
4. put oil in the hot pot and put more oil. After ginger slices and garlic slices are sauté ed, add beef slices and fry over high fire until the edges of the meat slices change color. There is no need to stir fry during this period;
5. Add mushroom slices and oyster sauce, then pour a little wine on the side of the pot and stir well before serving.
