Yangming banquet is an organic combination of traditional dishes and Yangming culture. This is a special banquet with local food culture characteristics. It is divided into traditional Yangming banquet and modern Yangming banquet, which is developed and managed by Xiuwen Yangming Banquet Research Association.
The first course: Mr. Yangming from Jinjie, You Zhu loves bamboo, but his poem "But he is ashamed of quiet bamboo joints and likes to see plum blossom and bone spring" uses bamboo as a metaphor for human integrity. During his exile in Longchang, he devoted himself to education and was not afraid of power. This dish is to knead the roots of fresh broken ears of Xiuwen folk into inches, wash them, and add spices such as pepper, ginger and onion to make them cool. In order to express Mr. Yangming's feelings, it was named "You Zhu Jinjie".
The second course: When Mr. Yang Ming of Hongyun Jiaoke was in Longchang, he liked to eat pickles pickled by villagers, especially red peppers. After this dish was admitted to Yangming Banquet, it was named "Hongyun Pepper Guest" because of its bright red color and Mr. Yangming's poem "Faraway guests always pity local conditions and customs, and empty mountains only see clouds".
The third course: Yu Zhan Chunguang Mr. Yangming loves the natural scenery of Guizhou, and there are many chants in his poems, such as "Zhu Gui Road enters from the summit, Yelang people come from the Japanese side". Mr. Wang also likes hiking. When he lived in Longchang, he wrote some poems describing spring, such as Spring Tour, Liu Guang Xiaofa and Village South. This dish is named after Mr. Yangming's poem "A jade lamp comes in spring and leaves are scattered". By changing the shape, color and taste of traditional corn bread with jade powder, Mr. Yang Ming's love for nature was expressed.
The fourth course: when Mr. Yangming, a raptor, lived in the Dragon Farm, he was both sad and angry. He once wrote a poem "Southern Eagle", which is known as "Raptor" and "God Bird". This dish has been changed in the shape of radish and other vegetables to show Mr. Yang Ming's lofty thought that "Ye Fu will soon become a dragon farm".
The fifth dish: In the folk story about Liu Guanghe's catfish, Mr. Yangming gave Liu Guanghe's catfish to Wang Zhi, the governor of Guizhou, and other officials began to care about the sufferings of the people, so Liu Guanghe's catfish was famous for hundreds of years. Liu Guanghe catfish is tender and delicious, and it is a traditional dish in Xiuwen.
Lesson 6: When Mr. Yangming lived in the wilderness of Longchang, a mountain fire broke out in Mugeqing, which brought great difficulties to the lives of local people. Mr. Yang was worried, so he went there. On the Lantern Festival, the local people picked up a rabbit that was burned to death by wildfire and cooked it for Mr. Wang. Mr. Wang is dissatisfied with his food. After he came back, he wrote poems such as Mountain Fire in Mu Ting, Yuanxi, Mountain Road, etc. Among them, there was a poem "Wild fire everywhere", which showed his concern for the people. Yangming banquet is based on this, so the traditional famous dish "Braised Rabbit" is included in the menu and named as "Wild Roast".
The seventh course: braised chicken tofu, which is a traditional dish of Xiuwen. Mr. Yangming once preached to the people of Longchang the skill of ordering tofu in the south of the Yangtze River, which shows that Mr. Yang likes tofu. Later, the Yi people in Liu Guang learned the technique of chopping the chicken's cloud bone into minced meat and cooking it with soybean milk. Tofu has a unique flavor and has become a famous dish for local guests.
Eighth course: Traditional dishes made by several restaurants in zhazuo town. All businessmen and tourists should stop and taste them. This dish is made from the thighs of local high-quality pigs, washed and dried, fried and stewed in an oil pan, and made into hot pot with leeks, garlic and star anise, which is a great tonic in winter.
Lesson 9: Mr. Yangming, a fern in Xishan Mountain, often feeds on wild ferns and once wrote the poem "Picking Ferns in Xishan Mountain". Xishan, namely Ximenpo, xiuwen county. This dish is a common home-cooked dish for people who are writing a composition.
The tenth course: Fried wild mushrooms. Mr. Yangming often goes up the mountain with villagers to pick wild mushrooms. Wild mushrooms are fragrant and delicious after cooking, and they are also popular folk dishes.
The eleventh course: stewed goose soup. When Mr. Yangming lived in Longchang, he lived in Yiwo and Yangming Cave. Because of the humidity in the cave, nearby villagers often sent goose soup to help him drive away the cold and strengthen his body, so he included this dish in the Yangming banquet menu.
The twelfth course: sauerkraut and potato soup or melon-pointed bean soup. This dish is refreshing and not greasy, and the soup is delicious. It's a folk snack of Xiuwen. The twelve dishes of Yangming Banquet are the main courses of Yangming Banquet, and there are other staple foods, such as rice or corn-stuffed rice, which are served with snacks at dinner (mainly potherb jiaozi, Bowl with Wotou and Longchang steamed stuffed bun); The wine to drink during the dinner is Yangming banquet wine or bowling wine. After a hearty meal, drink Liutun Gao Feng Moss Tea or try Liuguanghe Kiwifruit.
