Seasoning: salt 4g pepper 10g star anise 3g cinnamon 2g onion 5g ginger 3g garlic 5g chicken oil 20g cooking wine 10g each.
The practice of oily chicken for boys:
1. Chickens are selected, slaughtered, feathered, disemboweled, eviscerated, washed and pickled.
2. Put the pot on the fire, add salt, pepper, aniseed, cinnamon, onion, ginger and garlic cloves, and add water to make soup. After cooling, add the washed chicken and marinate for 2 to 3 hours.
3. Take the chicken out to dry before eating, then remove the chicken feet and wing tips, cross your legs on the sternum, put them in a cage, and steam the soup with pickled pepper chicken soup in a steamer for about 1 hour.
4. After coming out of the cage, smear the chicken with refined chicken oil.
