Method:
1/3 Wash and slice fresh mutton, sizing with appropriate amounts of salt, cooking wine, egg white and starch, mix well and set aside. Cut red pepper into shreds or small slices, and cut celery into small pieces and set aside. Cut ginger and green onions into shreds or small pieces and set aside.
2/3 Heat the wok and add an appropriate amount of oily mutton slices until they are seven or eight times cooked. Remove from pot and set aside.
3/3 Then add ginger, green onion, celery and stir-fry a few times until fragrant and tender.
Ready to serve
