Since then, this simple and easy-to-learn marinade recipe, which can be made by adding a little home-cooked seasoning, has become a trump card for showing off cooking skills everywhere, instantly killing street marinades!
First, simply prepare super-simple raw materials:
2~5 onion segments, about half ginger, 50g light soy sauce, 20g dark soy sauce, 20g crystal sugar 15g, 20g oyster sauce, 2 fragrant leaves, 2 star anise (anise), salt 1 pinch, and 60g cooking wine.
These condiments are very common at home, so there is almost no trouble and there is no need to prepare anything separately. After preparing the seasoning, choose the dishes that need to be marinated. Generally, my personal braised dishes are just the right amount of chicken wings, chicken gizzards and chicken feet, and I usually add some lotus root slices, eggs and dried beans.
Prepare in advance: in order to taste the taste of eggs, it is best not to cook them directly in the marinade. I usually boil eggs in white water for about eight minutes, shell them and then cook them.
Specific steps:
1, chicken wings and chicken gizzards are put into cold water in a pot, ginger slices and cooking wine A40g are added, boiled for one or two minutes, then taken out and put into ice water. This step is mainly to boil the blood out.
2. Take a deep pot, heat it, add rock sugar, and turn off the heat when it melts and caramel color appears.
3. Add chicken wings, chicken gizzards, eggs and other ingredients. Then pour water without ingredients, such as onion, ginger, soy sauce, soy sauce, oyster sauce, fragrant leaves and star anise, boil over medium heat, then pour cooking wine, cover the lid and cook over low heat for half an hour.
If you like spicy food, you can add some peppers and dried peppers.
4. After about 20~30 minutes, add lotus root slices and dried beancurd, cook until the lotus root slices become soft, and add salt according to personal taste. Turn off the fire and soak for more than 2 hours, and the taste is better.
