Mixed Stir-fried Bitter Melon with Miso

Ingredients: 1 piece of bitter melon, 1 box of tofu (medium firm), 1 packet of small white mushrooms, 2 eggs

Seasoning: Miso 1.5T soy sauce 2t sugar 1T wine 1T mirin 1T water 2T

Method:

1. Remove the seeds from the bitter melon, scrape the film inside the melon and cut it into pieces, then add Boil in boiling water until cooked and remove. (The bitter taste of bitter melon is in the thin film inside the melon. If you are afraid of bitterness, dig out or cut the inner membrane cleanly, so it will not be so bitter. You can also remove the bitterness by boiling it first.)

2. Beat the eggs. Fry until cooked.

3. Cut into pieces and set aside.

4. Pour oil into the pot and fry the thickly sliced ??tofu.

5. Fry until both sides are golden brown and set aside.

6. Mix the seasonings and set aside.

7. Pour the mixed seasoning into the pot, then add half a cup of water and cook together.

8. Add bitter melon, tofu, eggs and white mushrooms and cook until the juice is reduced.

9. This dish is originally vegetarian. I think adding bonito flakes will make it more delicious, so I cook it until it is about 80% thick and the juice is reduced, then add the grated bonito flakes and mix well. Add the bonito flakes to add more It’s umami, so if you’re a vegetarian, you don’t need to add it.

10. Plate and serve.
