Practice of Chicken Soup for Moon Meal
Prepare an old hen, 7 to 8 pieces of scallops, a piece of ham, a piece of ginger, a handful of shallots, a little yellow wine, a little salt and a little medlar. Put scallops in a cage, add yellow wine to remove fishy smell, steam for 20 minutes and take them out for later use. Take a ham with a bone, pat the ginger and tie the onion. Blanch the old hen with cold water and wash it clean. Cut off the head and tip of the chicken.
