1. Fried cod
Ingredients: silver cod (one) and eggs (1)
Ingredients: salt, monosodium glutamate, pepper, cooking wine, soy sauce, raw flour, peanut oil.
Exercise:
1. Thaw the silver cod, rinse it with clear water and dry it. It is best to use a clean paper towel to absorb the water from the silver cod.
2. Take a small amount of salt, monosodium glutamate, cooking wine and pepper and mix well. Marinate the silver cod for 20 minutes.
3. Take an egg, take the yolk, and evenly coat the yolk on the silver cod.
4. Pour the raw flour into the dish, dip the raw flour with the silver cod wrapped in egg yolk, so that the raw flour is thinly wrapped with silver cod and evenly dipped on both sides.
5. Heat the frying pan and pour in peanut oil. When the oil temperature is 80% hot, add the silver cod, fry it on medium fire until both sides are golden, and then fry it on high fire, in order to force out the oil that invaded the silver cod during frying.
6. Take out the fried silver cod and put it on the chopping block. Chop and plate.
Second, steamed cod.
Ingredients: 2 cod.
Accessories: 5 capsules of Lycium barbarum.
Seasoning: onion 1, ginger 1, cooking wine 1, light soy sauce 4, a little white pepper, chicken oil 1.
Exercise:
1. Two pieces of cod, rinse with clear water and control the moisture.
2. Marinate with a little cooking wine and white pepper.
3. Slice the onion leaves into filaments, soak them in clear water, and then soak a few medlars.
4. Sauce: Pour 4 tablespoons of soy sauce into a small bowl.
5. Add water to the pot, bring to a boil, add cod fillets, put shredded onion and ginger on the surface, and drizzle with sauce.
6. Dig another spoonful of chicken oil and put it on the fish.
7. Cover the pot and steam for 4-5 minutes. Turn off the heat and steam for 2 minutes.
