Pressure cooker method for braised pig's trotters
1. Buy a pig's trotters first, and ask the butcher to help with the pig's trotters. Peel the bottom part, then scrape the pig hair clean and chop it into small pieces. Take the pig's trotters back and wash them several times.
2. Open the induction cooker, add a proper amount of water to the pot, and add a little salt and vinegar. Boil the water and soak it in the cleaned pig's trotters for a while. If more foam is produced, it can be removed with a spoon.
3. Take out the cooked pig's trotters, put them in clean water at one time, remove the floating foam and drain them, then put them in a pressure cooker, prepare some auxiliary materials: star anise, cinnamon, garlic, ginger and dried pepper, treat these auxiliary materials slightly, put them in the pressure cooker, add various seasonings at the same time, add appropriate amount of water, start the soup-making mode, and press the pig's trotters for a while.
4. Stew for about 1 hour, take the trotters out of the pressure cooker, drain the water, put them in a large bowl, and add seasonings to marinate for a while. At the same time, clean the pot, drain the water stains, then add a proper amount of oil, ginger, minced garlic, dried Chili, star anise, cinnamon, etc., and then add a little sugar to fry until thick.
5. Put the pickled trotters into the pot, then stir fry for a while, turn the trotters over and let them be covered with sauce. Then add a proper amount of water, which is about half the volume of pig's trotters. Turn the fire to boiling water, cook for a while and then turn to medium heat.
6. Stew the trotters slowly over medium heat, turn the trotters over after a while, slowly boil the water, and add a little salt, soy sauce, cooking wine and vinegar to adjust the taste. If the color is dark, you can add some soy sauce. When the water is dry, turn to high heat and stir fry quickly until the sauce sticks to the pot. Turn off the fire and put it on the plate. A plate of pork feet marinated in pressure cooker and braised in brown sauce is ready. Full of fragrance, soft to eat, effortless, very good.
Matters needing attention
When you press the trotters in a pressure cooker, if you want to use trotters soup, you don't need to add too many ingredients. If you don't want pig's trotters soup, you can add the accessories and seasonings in front to let some flavors penetrate into the pig's trotters, and the braised pork in the back will be more delicious.
