Jiuzhuan large intestine is a traditional dish in Jinan, Shandong Province, and one of the four famous dishes in Shandong Province. It originated from Jiuhualou Hotel in Jinan in the early years of Guangxu in Qing Dynasty.
Jiuhua Building was opened by Du Shi and Zou Shi, wealthy businessmen in Jinan. Among them, Du has a special liking for the word "nine", and he always takes the number "nine", so the names of his shops are all crowned with the word "nine".
Although the scale of Jiuhua Building is small, the chefs are all masters, and they are particularly particular about cooking, such as launching pigs into the water. "Braised large intestine" (the original name of Jiuzhuan large intestine) is very famous.
According to legend, this dish was served at Du's banquet once, and everyone was full of praise after tasting this delicious food. A scribe said that such delicious food should have a good name, and Du welcomed it. On the one hand, the guest catered to the host's hobby of "Jiu Zhuan" and praised the chef's skill, and immediately named it "Jiu Zhuan Da Chang".
Cooking method
The seasonings used are traditional Chinese medicines such as Amomum villosum, Cinnamomum cassia and Cardamom, and spicy seasonings such as onion, ginger, garlic, cooking wine, clear soup and sesame oil.
