Boiled meat, belonging to the Sichuan cuisine, the origin of the name is because the meat is not oil, boiled and made, so the name "boiled meat".
In 2014, a chef friend opened a restaurant, I was inside the food and cashier (restaurant small, multi-tasking), leisure chef friend explained to me "boiled meat" home practices. The steps are actually quite simple and suitable for a family of three.
The reason why this dish is called "boiled pork" is that the meat is not cooked in oil, but in water, so it is called "boiled pork". This dish, I believe we have all eaten, mainly set of spicy, fresh and smooth and one, it is characterized by "hemp, spicy, fresh, fragrant", belong to the Sichuan cuisine in a famous home cooking.
I like to use bok choy, bean sprouts and sliced meat to make it.
The specific method is as follows:
1, the pork pork loin cut into thin slices and add water, starch, cooking wine and a little salt and stir evenly marinated to taste;
2, the fire on the place of a frying pan, frying pan with a little cooking oil, hot pot of cold oil (prevent "paste") add dried chili peppers, shredded ginger, garlic and stir fry out of Fragrance, and then the dry chili, ginger, garlic piece fished out;
3, will be "PI County Bean Paste" (the soul of Sichuan cuisine) into the pot, stir-fry out of the red oil, add an appropriate amount of water;
4, the water boiled, add salt, pepper, soy sauce and other seasonings;
5, will be washed and good bean sprouts and bok choy into the pot to cook (first put bean sprouts, because bean sprouts are harder to cook than bok choy), then fish out, into the bottom of the bowl. If you are more careful people, you can put the bean sprouts and greens alone with water strainer, so you can better remove the odor of the bean sprouts;
6, will be marinated meat slice piece by piece into the pot to cook, cook to the two sides of the white can be, not easy to cook too hard, so that the meat is not tender, will be boiled meat along with the broth and poured into the bowl of put greens bean sprouts;
7, chopping some garlic and chili noodles and put on the meat, if you like a little bit of hemp, here you can add a spoonful of pepper;
8, another pot, the pot put cooking oil, heating (temperature to be a little bit higher) after pouring in the minced garlic and chili noodles, a bowl of fragrant "boiled meat" is made.
