Ingredients: fresh dog meat 1500g, coriander 200g, pickles 100g, 5 dried red peppers, 50g winter bamboo shoots, 50g Shaoxing wine, 5 small red peppers 15g, refined salt 5g, green garlic 50g, soy sauce 25g, monosodium glutamate1.5g.
Practice: 1. Boned dog meat, soaked in warm water, scraped clean, boiled in a cold water pot, fished out, washed twice with clear water, put in a casserole, added with chopped green onion, ginger, cinnamon, dried red pepper, Shaoxing wine and clear water, boiled to 50% rotten, and cut into strips 5 cm long and 2 cm wide. Chop pickles, winter bamboo shoots and small red pepper, cut green garlic into sections and wash coriander.
2. Put the wok on a big fire, add 50g of cooked oil, add dog meat to smell when it is 80% hot, spray Shao wine, add soy sauce, refined salt and original soup, boil it, pour it into a casserole, simmer it with low fire until it is crisp and rotten, and collect the juice and put it on a plate.

Stewed dog meat in casserole:
Stewed dog meat in casserole is a famous dish in many places. This dish is golden red in color, rich in fragrance, juicy, crisp and mellow.
Ingredients: 500g of dog's hind leg meat, mint100g, sugar10g, 25g of dried pepper, liquor10g, onion10g, ginger10g, 6 g of aniseed, and tsaoko/kloc.
Production method: 1. Cut the dog meat into 4cm cubes, rinse it twice with clear water, control the moisture, wash the mint and pick the tender tip.
2. Stir-fry the wok, inject rapeseed oil, heat it to 70%, add Amomum tsaoko, aniseed, pepper, sugar, salt, dried pepper, onion, ginger and soy sauce, stir-fry the dog meat for 20 minutes, inject the broth, and pour it into the casserole after boiling. Put the casserole on fire, add the white wine twice, switch to low fire, stew for about 1 hour, and add mint when the soup thickens, and eat with the casserole;
Note: 1. Remove blood stains from dog meat with clear water, and then rinse it clean. After cooking, the smell is greatly reduced and the meat is fragrant.

Ingredients: cooked aconite 6g, ginger 100g, dog meat 150g, and proper amount of seasoning.
Production method: stir-fry garlic and peanut oil in a wok, add dog meat pieces until the skin turns yellow, add appropriate amount of water, boil with strong fire, add cooked aconite slices and simmered ginger slices, stew with slow fire until the dog meat is cooked and rotten, and season.

Aphrodisiac dog broth:
Take 250 grams of dog meat, wash it, put it in a boiling pot, soak it thoroughly, remove the washed blood foam with cold water, and then cut it into pieces one inch square. Wash and chop onions and ginger.
