How to store cheese
Method 1

Freezing Cheese Cubes

Cheese cubes frozen in this way can be stored in the freezer for up to 6 months.

1

Choose the right cheese. Textured, very hard or semi-hard cheeses such as Brie and Camembert can be frozen whole.

2

Cut large blocks of cheese into smaller pieces if necessary. Partially refrigerated cheese cubes should weigh between 225 grams and 500 grams.

3

Wrap the cheese block. You can wrap the cheese in moisture-proof, airtight wrapping paper. You can choose:

Wrap it in waxed paper and then wrap it in foil. Place the cheese in a sealable plastic bag or airtight container.

Wrap in foil and place in a sealable plastic bag or airtight container.

Wrap in food wrap, then wrap in foil, or place directly into a sealable plastic bag, or airtight container.

Brie or Camembert can be left in its original packaging and placed directly into a sealable plastic bag or airtight container.

4

Seal the plastic bag or container. Label it and write the save date.

5

Place in freezer refrigerator.

6

Thaw slowly. To thaw, you can transfer the cheese from the freezer to the refrigerator. The slower you thaw the cheese, the better so that it can retain moisture.

If cheese becomes crumbly during freezing, it can be used for cooking, added to sauces, or melted on bread or toppings. Blue cheese is especially fragile.

Method 2

Refrigerate shredded or grated cheese

Shredded or grated cheese can be refrigerated for 4 to 6 months.

1

Choose very hard or hard cheeses. Class cheeses grate easily and can be refrigerated well in this manner.

2

Shred or grate the cheese. You can use a manual vertical cheese shredder or grater, or a food processor with a cheese shredding blade attached.

3

Place the shredded or grated cheese in a sealable plastic bag. Leave about 1.3 centimeters of space above the sub.

4

Seal the bag. Gently flatten the bag to expel any excess air before sealing it. Label the bag with a save-the-date.

5

Place in the freezer refrigerator.

If you packed a lot of bags of cheese, start by spreading them out on a baking sheet. Try to flatten the cheese inside, but don't break it. Only then put them in the freezer. Once the bags are frozen, you can neatly stack them on top of each other.

6

Use as needed. Shake out or break off any shredded or grated cheese that you need for cooking.

Shredded cheese can be placed over hot food to melt (like spaghetti sauce), but this also creates a little moisture, so you need to take that into account.

Method 3

Refrigerate cheese slices

Pasteurized cheese slices can be refrigerated for up to 3 months.

1

Choose hard cheese slices. Buy pre-sliced packaged cheese or slice a whole block yourself. You can use a cheese slicer, a sharp knife, or a special wire cutter to slice the block of cheese.

If you slice the cheese yourself, make sure each slice is the same size.

If the cheese is pre-sliced, check it before refrigerating. Moldy cheese slices are not suitable for refrigeration and must be discarded.

2

Cut baking paper or sandwich wrappers into squares the same size as the cheese slices. You will need to use these papers to separate the cheese slices when hiding.

3

Stack the cheese slices and wrappers. Repeat stacking the cheese slices and square wrappers until you have stacked 10 slices of cheese. Continue stacking until finished.

4

Slip the stacked cheeses into a sealable plastic bag or a freezer-safe container. Label with a save-the-date.

5

Place in the freezer refrigerator. It sits in an easy-to-access place for your family to take out a slice or two of cheese when the need arises.

6

Use the cheese. To remove one or more slices of cheese, open the package or container, then peel off the wrapper under the first slice. The process must be repeated for each slice of cheese removed. Discard the wrapper and use the cheese as usual.

You can put frozen cheese slices directly into sandwiches to take to school or work. By lunchtime, the cheese slices should be thawed.

Frozen cheese slices can also be placed directly on bread and taken to be toasted or otherwise heated.

You can also put frozen cheese slices right on top of dishes you're preparing, such as spaghetti bake, pies, and decorative toppings.

Tip

If you accidentally freeze cream cheese, you can use it as a sauce or frosting.

While soft cheeses themselves can't be refrigerated, dishes made with them can be, such as stews or casseroles with soft cheeses.

You can wrap blocks of cheese that you want to refrigerate in freezer paper.
