1. Wash the peas to be used and prepare the onion segments at the same time.
2. On high heat, heat a moderate amount of oil in a wok. Add ginger and salt and saute. Pour in the peas and stir-fry over high heat.
3. Add the rib sauce and stir-fry for a few minutes. Add appropriate amount of water. Cover the pot, bring to a boil and cook the peas. Turn off the heat, add monosodium glutamate (MSG), stir well and sprinkle with green onions.

Peas are nutritionally complete and balanced. Pea grain consists of seed coat, cotyledon and embryo. Of these, the dried pea cotyledons contain 96 percent of the total seed nutrients, 77 percent of the protein, 77 percent of the fat, 77 percent of the carbohydrates and 89 percent of the mineral nutrients. Although the embryo contains protein and mineral elements, it accounts for a small percentage of the grain.
The seed coat contains most of the carbohydrates that cannot be digested and utilized in the seed, and is also high in calcium and phosphorus. The proteins are 21% serum, 66% globulin and 2% gluten.
