How to make shrimp and chicken noodle soup?
Slice ginger and mince pork.
Bring the water to a boil, add fresh shrimps and blanch the minced meat.
Put oil in the pot, sauté the ginger slices until fragrant, add the minced meat and stir-fry. Add fresh shrimps and stir-fry. Pour in some cooking wine, sugar, and seasoning to remove the fishy smell.
Pour in chicken soup and add appropriate amount of water. The amount of water and chicken soup is about the same as the bowl of noodles. Bring to a boil, then turn to low heat. Add appropriate amount of salt and season.
Put into another small pot, add water and bring to a boil. After the water boils, add the rice noodles. Add vegetables to the chicken stock pot. Boil the noodles until medium cooked and drain into the chicken soup. Add the green onions and serve in a bowl.
Tips
Rice noodles are unique to Taizhou people here, and are slightly different from rice noodles. Without rice noodles, there is not much difference if you add other noodles. Light noodles are suitable for thin noodles and are more flavorful.
