Ingredients: 2500 grams of tomatoes.
Accessories: 25 ml of high-strength liquor.
Steps:
1. Wash the tomatoes and set aside.
2. Wash the bottles in advance, drain the water, and rinse them one by one with high-quality liquor (first pour the wine into one bottle and mix well, then pour into the other).
3. Peel off the skin of the tomatoes, break them into small pieces and put them into the bottle. Do not fill them too full. If it is a small-mouth bottle, break it into small pieces and pour it into the bottle through a funnel.
4. Tighten the lid.
5. Put cold water into the pot, the water can be 1/2 of the height of the bottle. Boil the pot and cook for 30 minutes.
6. After cooking, let it sit for 30 minutes, then take it out and tighten the lid again. (Due to thermal expansion and contraction, the lid will loosen when cooking, so check it, otherwise the lid will be damaged if it leaks.).
7. This is the prepared tomato sauce. Put it in a ventilated place. After it cools down, you can put it in a box and store it in the basement. It can be stored for one to two years, but we usually destroy it in one year. The key to making tomato sauce is that the bottle must be clean and free from oil, and the lid must be tight to prevent air leakage.
