Method:
1. Wash and cut the beef brisket, and wash the noodles for later use.
2. Add the right amount of water, beef brisket, ginger slices and a few drops of white vinegar to the pot (this will make the beef more fragrant and tender). Bring the fire to a boil and skim off the foam.
3. Turn to slow fire, add Angelica sinensis, laurel leaves and Cordyceps sinensis, stew for about 1 hour (without uncovering during the period) until the beef is cooked, and add salt and old wine to taste.
4. Boil the soup pot, cook the noodles, drain them, take them out and put them in a bowl to serve with beef soup.
