Two ways:
One, after cutting the leeks, first put the oil and mix, and then put salt, so that the leeks mixed out of the stuffing is not easy to get out of the water. This is because the oil to the leeks wrapped inside, the leeks form a film of oil on the surface, water is less likely to penetrate, but also less water.
Advantages: original flavor
Disadvantages: leek filling mixed to wrap quickly, long time will still be out of water.
Two, leeks cut and salted for 5 to 10 minutes, then squeeze the water out of the leeks. Then mix the filling, so that the leek filling in the water is also much less.
Advantages: the leek filling can be left for a longer period of time after mixing
Disadvantages: the flavor of the leeks becomes diluted.
