Ingredients: 6 eggs, 2.5 cups of water, rock sugar 120g.
Exercise:
1, boil water, put rock sugar, burn and cool for later use;
2. Beat the eggs well and mix in the sugar water;
3. Pour the egg mixture into a small bowl and steam for 6 minutes or until it curdles.
Stewing eggs is very experienced, especially when the time and heat are well controlled. If it is early, it will be unfamiliar in the middle, and if it is late, it will be too old outside, so every time it is done, it is like taking a chance. But obviously it is so difficult, and I often make it because the ingredients are too common, that is, eggs+water+sugar, which is readily available, but this collocation is not easy to make as a dessert, so it is really "seemingly ordinary, but actually extraordinary"!
There is another way, my mother taught me:
Use a spoonful of sugar and a drop of vinegar to remove the fishy smell.
