Based on my cooking experience, the steps for stewing fish are as follows:
1. Prepare ingredients: Wash the fish, remove scales, gills and internal organs, and cut into thick slices and set aside.
2. Fry the fish: heat the pan with oil, add onion, ginger and star anise and sauté, add the fish slices and fry until golden brown on both sides.
3. Cook the fish: add boiling water, bring to a boil over high heat, then reduce heat and simmer for 35 minutes.
4. Seasoning: After the soup is thick and white, add cooking wine, salt, chicken essence, pepper, cooking oil to taste, fill the bowl and sprinkle with parsley.
