Side dishes needed for the griddle

Let's take dry pot ribs as an example: the side dishes are a catty and a half, a large piece of ginger, twenty small garlic, a tablespoon of cooking wine, a tablespoon of light soy sauce, a tablespoon and a half of oyster sauce, half a tablespoon of dark soy sauce and half a tablespoon of sugar.

method of work

1, 1 catty and a half ribs washed and cut into small pieces, add 1 tablespoon cooking wine, 1 tablespoon soy sauce, 1 tablespoon oyster sauce, 1 tablespoon soy sauce and 1 tablespoon sugar, mix well and marinate for about 2 hours.

2. Take a casserole or a pot with good thermal insulation (I use a 18CM small cast iron pot), spread sliced ginger and peeled garlic all over the bottom of the pot, and then pour in about three tablespoons of cooking oil (the amount that can spread the whole bottom of the pot is enough).

3. Spread the marinated spareribs into the pot, and pour the marinade of the marinated spareribs in the bowl into the pot, cover it, boil it over medium heat, and simmer for about 20 minutes.

4, open the lid and sprinkle with chopped green onion, and even the pot can be served on the table.

Tips

1, this is a dry pot dish. You don't need to put a drop of water in this process, so you don't have to worry about burning it. There is oil in the pot and the marinade for marinating ribs. If you turn on the fire for 20 minutes, it won't burn.

2, salad oil can cover the whole bottom of the pot, don't put too much, otherwise it will feel too greasy, and the ribs themselves have oil.

3. If you want to shorten the curing time, then cut the ribs into small pieces, and the curing time can be greatly shortened.

4. If you like the crispy ribs and need to extend the cooking time, you should always pay attention to the situation in the pot and be careful not to burn them dry.

5. When eating, don't let go of the garlic in the pot. After boiling in oil at high temperature, the garlic becomes soft and sweet, which is very delicious.
