Preparation steps:

Step 1: Slice the cucumber. Don't slice too thin, add 1 spoon of salt and rub with your hands to squeeze out the water.

Step 2: Shred the onion, add 1 tbsp salt, rub with your hands, rinse with water when the water comes out and squeeze the water out.

Step 3: Cut the ham into strips, peel and cut the potatoes into cubes, peel and cut the carrots into small pieces. Put the potatoes and carrots in a pot, add water that doesn't cover the potatoes, and bring to a boil over high heat.

Step 4: Bring water to a boil, then reduce heat to medium-low and cook for 10 minutes or until potatoes are tender enough to handle. Pour off water, then turn heat up to high and cook, stirring constantly to remove water, until a film forms on bottom of pot.

Step 5: Transfer to a bowl and add 2 tablespoons of olive oil, 1 tablespoon of vinegar, 1 tablespoon of salt, and ? tablespoon of pepper while still hot, stirring and mashing as you go.

Step 6: Add the onion, ham, cucumber, and mayonnaise and mix well and serve.

Tips:

To add the seasoning when the potatoes are hot, you can better integrate and get a more mellow taste.
