Xiangshui rice is named after Xiangshui Village, the place where it is produced. The area around Xiangshui Village, Ning'an City, Heilongjiang Province is a lava platform. Xiangshui rice is produced on the shores of Jingbo Lake in Heilongjiang Province and is a famous specialty of Heilongjiang Province. The grains are plump, hard in texture, bluish white and transparent in color. When cooked, the grains look like oil and have a rich aroma.
The unique flavor of Xiangshui rice is directly related to the environment in which it grows. Due to ancient crustal movements, molten magma condensed into a whole slab of stone in the Xiangshui area. It weathered over time and became basalt full of pores. Xiangshui rice fields are planted on soil about 0.33m thick from the surface of the rocks. The rice relies on the heat reflection and water seepage of the rocks. The water temperature in the rice fields is high, the temperature difference between morning and evening is large, and irrigation and drainage are rapid, making it easy to dry the fields. This is the secret why Xiangshui rice grows solid, matures quickly, and is nutritious. Xiangshui rice has been the tribute rice of all dynasties since the Tang Dynasty. It is still used for state banquets today and is known as the "King of Rice in China". After the founding of the People's Republic of China, the state allocated huge sums of money to build irrigation areas, expand the planting area, improve planting techniques, and increase the yield per unit area. Xiangshui rice continues to enjoy a good reputation at home and abroad. Xiangshui rice has won the gold medal at the China Agricultural Expo for three consecutive years and received national green food certification. The "Xiangshui brand" trademark has been rated as a well-known trademark in Heilongjiang Province.
