Prepare the meat skin and scrape the surface with a knife. Wash it with water and cut thin strips. Heat the strips of meat skin in water.
When the water boils, skim off the foam, add green onion and ginger. Add peppercorns and simmer. After cooking the meat skin, fish off the onion, ginger, seasonings and peppercorns.
Let it cool, refrigerate and serve as you like. Serve with a drizzle of garlic paste, very fragrant.
