The method of stuffing mutton dumplings;
One: Chop the fresh mutton into meat stuffing with a knife, preferably by hand. The meat stuffing stirred by machine is not as fragrant as that chopped by hand.
Two: cut the onion, ginger and garlic into pieces for later use, and try to cut them as finely as possible.
Three: put the minced onion, ginger and garlic into the chopped mutton stuffing and stir well. Give it a good stir with chopsticks, and the more even it is, the better.
Four: Then put the salt, cooking wine and appropriate amount of licorice powder into the mutton stuffing and continue to stir. Cooking wine and licorice can remove the smell of mutton, and retain the flavor of mutton itself.
Five: Finally, the spiced noodles and chicken essence are put into the mutton stuffing and fully stirred, and the mutton dumpling stuffing is successfully made.
