Step2: Slice galangal, dice spicy millet, cut lemongrass stems into about an inch long, wash and cut mint leaves, basil, and coriander into sections and set aside.

Step3: Wash and cut the beef tenderloin into cubes and set aside.

Step4: Add salt to the water, bring to a boil, add rice noodles, and cook for 5 minutes.

Step6: Put the coconut milk into the pot, add 500ml of water and heat it. (Because the coconut milk I used is thicker, I dilute it with water. If you use coconut milk, just add 800ml of coconut milk.) After boiling, add lemongrass segments, lemon leaves, ginger slices and millet, and cook over low heat. Cook for 10 minutes.

Step7: Add 3 large bowls of water, add pork and fish sauce, sprinkle in appropriate amount of pepper, and cook over medium heat for 20 minutes.

Step8: Put an appropriate amount of vegetables and herbs such as coriander, basil, mint, etc. in the bowl, and then add an appropriate amount of rice noodles.

Step10: Drizzle with lemon juice and serve!

Today, someone in the group has a birthday. Everyone shouts, happy birthday! I think a bowl of hot noodle soup would be the perfect occasion for a birthday! So, I made a bowl of Laos special rice noodles, took photos, and sent them out to wish my friends (shuai) another year older (lao).

In our country, eating longevity noodles on birthdays has become a custom. When I was a child, before cakes were popular, what I looked forward to every birthday was a bowl of noodles made by my mother. The rich toppings include my favorite mushrooms, fungus and shrimp, plus two poached eggs. It is warm and satisfying in one bowl, and the birthday becomes meaningful.

In Laos, khao poon is also a well-known traditional dish. It is eaten on special occasions such as weddings. Coconut milk soup is smothered over rice noodles, vegetables and aromatic herbs, and a hearty squeeze of lime juices together into a tantalizing burst of flavors to tantalize your taste buds. I wonder if a halo appears above your head and you discover a zone of pure happiness?

Mr. Xiang was amazed by the soup base of khao poon, and he slurped up this amazing broth.

He asked, what is in this soup?

I said, how about coconut milk and fish sauce? Is it delicious?

He said, delicious! However, this vegetable is too weird to eat raw! Wife, are you sure the locals in Laos eat it raw?

Yes! The Laotian diet is very natural, and the dishes always contain a lot of fresh raw vegetables, and they even like to eat some bitter vegetables. There is a slang saying in Laos "van pen lom; khom pen ya," (Sanskrit), which means "sweetness will make you fall, but bitterness is the antidote", which is quite similar to our "good medicine tastes bitter"! In fact, the herbs and special sauces commonly used in Laotian cuisine are the real stars: mint, dill and galangal are all very important cooking herbs; garlic, shallots, lemongrass and other herbs are also often used In the process of cooking. Therefore, the entrance of Laotian food is a very rich "fireworks explosion" taste.

Many catering bosses always shout, "Have it your way"! Well, it’s time to let this sentence return to the place where it really belongs - return to the family and cook a meal by yourself. This is the real "I choose my taste"! For example, starting with the delicious coconut milk noodle soup in Laos, it will make you realize how creative cooking is. The most important thing is: absolutely pure, natural, and no additives!

Make something new tonight!

Good luck! !

The end! See you!
