First of all, before making dumplings, let’s mix the dough, prepare 500 grams of flour, and then add 250g of cold water to the flour. Generally, the ratio of noodles to water for making dumplings is 1:0.5-0.6. Do not use water all at once. Add to the flour, slowly and gradually, stirring while adding water. After first stirring into large floccules, knead it into a smooth dough, and finally cover it with a lid to let it rise for half an hour.
While the noodles are waking up, let’s start mixing the stuffing! Prepare 500g of pork filling (the fat-to-lean ratio is 3:7 is best) and 250g of celery. Then chop the meat filling you bought into small pieces. I usually chop the meat filling bought outside. I always feel that the meat filling outside is not too minced. It depends on your personal preference!
Chop it and put it into a basin. In the lower basin, add light soy sauce, dark soy sauce, oyster sauce, salt, pepper powder, chicken essence and sesame oil
Then cut some green onion and ginger. Add to the meat filling
Finally, pour some hot oil on it, stir in one direction, stir more, and set aside after stirring.
Wash the celery, then cut it in the middle with a knife
Then boil water in a pot and blanch the celery first. Don’t blanch the celery for too long, blanch for 6-6 7 mature, 1 minute is enough!
After blanching, take it out quickly, run it through cold water, then put it on the chopping board and cut it into small pieces, and then chop it into pieces. Next, chop the celery, put it into a basin, and then squeeze out the water from the celery with your hands or gauze!
Now put the squeezed celery and the mixed meat filling together.
Stir and stir. After stirring evenly, our celery and meat filling is ready.
At this time, our noodle is almost awake. We put it on the panel and knead it vigorously until it is smooth. If the dough is too big, first cut it into several smaller ones with a knife
Then take one of them, knead it slightly, then knead it into a long strip, and then use a knife to cut it into small pieces of even size.
The next step is to roll out the wrappers, then make the dumplings. Finally, these are the dumplings we have made, each with a thin skin and large fillings.
