My family lives in Qujing, Yunnan, where there are many wild mushrooms. Every year in the middle of June, there are wild mushrooms in the mountains. Wild mushrooms are delicious, but you can't eat them indiscriminately. If we make a mistake, we are easily poisoned, from dizziness, vomiting to death. There are a few wild mushrooms in Kunming now, but the price must be very expensive.
It is very strict to judge whether mushrooms are poisonous. We can't judge by observing colors, smells and shapes. These methods are all wrong and we can't listen to them. Many people say that fresh mushrooms are poisonous, but many edible wild mushrooms are also fresh in color. Many poisonous wild mushrooms are plain in appearance, and you can't talk nonsense about uncertain things.
In rural areas, how can I judge whether mushrooms are poisonous?
I have been picking wild mushrooms with my family since I was a child, and I am very familiar with the types of wild mushrooms. For example, the wild mushrooms I know are Tricholoma, Lactarius, a nest of sheep, Agrocybe aegerita, chicken termites, water chicken termites, rice chicken termites, chicken oil fungus, boletus, leek mushrooms, pseudo-green head, Tricholoma matsutake, fir trees, old head, Tricholoma matsutake and so on. It's really too much.
I don't know much about poisonous wild mushrooms, but I know a lot about edible wild mushrooms. So I only pick the familiar wild mushrooms, and I don't want the unfamiliar ones whether I can eat them or not. For those unfamiliar with wild mushrooms, don't pick them alone, but go with experienced mushroom pickers. Generally speaking, the rural elderly are most familiar with wild mushrooms.
Attention: Choose carefully in the process of picking wild mushrooms, and choose again when picking mushrooms to prevent toxic wild mushrooms from being mixed in. If you are still worried, I suggest blanching it before cooking. Some people say that frying wild mushrooms with garlic without blackening is not toxic, which is totally unfounded.
