1. Wash beans, star anise and pepper, and air dry them outdoors for about 3 minutes;
2. cut the washed beans into even small particles;
3. Add salt into chopped peppers, star anise and chopped beans and stir well;
4. Put the stirred beans into a clean glass bottle;
5. After installation, gently press it with a spoon for a few times, and the strength should not crush the beans;
6. Prepare a fresh-keeping bag, fold it in half, and put it above the beans in the bottle;
7. After pressing, turn the bottle over so that the beans do not fall out.
8. Prepare a sealed bag, and inject a small amount of water until the water just overflows the lid of the bottle;
9. Pour the bottle full of beans into a sealed bag with water for one week.
